Papa Focaccia Collab

We’re excited to have an ongoing collaborative effort with Papa Focaccia, a local focaccia company located in North Park, San Diego! // @papafocaccia

We are on our 6th loaf collaboration, each is on the menu for approximately a month at a time. Our first collaborative effort, “The Sunuva Peach,” was only supposed to run one week but it was so successful it became a seasonal menu item! From there we just kept going! Our favorite collaboration loaf is “The Bomb Mi” which is the result of Papa Focaccia extending the opportunity to us to create our own focaccia loaf. We created an ode to the strong Vietnamese community here in the heart of City Heights, delivering “The Bomb Mi” a delicious play on the Vietnamese classic the bahn mi.

So far we have had:

“The Sunuva Peach” – a rosemary sourdough focaccia loaf topped with our Lupa Mild sauce, mozzarella, pancetta, burrata, grilled peaches topped with fresh basil and a balsamic glaze.

“The Brewster” – a rosemary sourdough focaccia loaf topped with our Romolo sauce, mozzarella, Italian sausage, caramelized onions, yellow and orange bell peppers, topped with dollops of ricotta cheese.

“The Bomb Mi” – a sourdough focaccia topped with our Romolo sauce, fried pork belly, jalapeños, cucumber, bean sprouts, pickled daikon and carrots, cilantro, topped with a miso sauce and toasted sesame seeds.

“The Hulapeño” – a black olive sourdough focaccia topped with our Romolo Sauce, mozzarella, cupping pepperoni, jalapeños, pineapple, ricotta, and drizzled with a homemade hot honey.

“The Cheezus” - a sourdough focaccia loaf with mozzarella, fontina, parmesan and pecorino Romano, topped with our Romolo sauce and fresh basil.

Our latest collab loaf with Papa Focaccia:

“The Vegan Brewster” – a sourdough focaccia topped with our Romolo sauce, vegan mozzarella, vegan ricotta, bell peppers, caramelized onions and vegan sausage.
